Otaniemessä kasvaa solupihvi

Syömään! -kurssi valottaa ruokakulttuuriin, tuotantoon ja kulutukseen liittyviä kysymyksiä

Aalto-yliopiston Syömään! Ruoka on valmis! -ohjelma kokosi huhtikuussa Teurastamon Kellohalliin ruokaluennoille kymmeniä tiedonnälkäisiä ihmisiä kuulemaan ja keskustelemaan ruokakulttuuriin, ruoan tuotantoon ja ruoan kulutukseen liittyviä puheenvuoroja.

Ohjelma jatkuu tämän viikon aikana opiskelijoille suunnatuilla käytännön työpajoilla Aalto Biofilian laboratoriossa Otaniemessä. Kansainvälisten taiteilijoiden toteuttamissa työpajoissa opetellaan kohutun laboratoriolihan valmistamisperiaatteet ja analysoidaan prosessoitua ruokaa laboratoriomenetelmin.

Ohjelma huipentuu lauantaina 10. toukokuuta ArtMeatFlesh-kokkitapahtumaan Teurastamon Flavour Studiossa. Japanilaisen Iron Chef -tv-shown innoittamassa tapahtumassa kaksi taiteilijoista, MTT:n tutkijasta ja keittiömestareista koottua joukkuetta valmistavat ruokaa ja valaisevat proteiinintuotannon käytäntöjä ja salaisuuksia – sekä spekuloivat lihansyönnin mahdollisilla vaihtoehdoilla lähitulevaisuudessa. Vauhdikas show antaa tilaa ruoan maistelulle ja kuumallekin keskustelulle.

ArtMeatFlesh on ilmainen tapahtuma ja se pidetään englannin kielellä. Tilaa on rajoitetusti, joten yleisöä pyydetään saapumaan paikalle hyvissä ajoin mahtuakseen sisään Flavour Studioon. Tapahtumassa tarjoillaan maistiaisia. Lisätietoja löytyy tapahtuman facebook-sivulta.

Culinary Forensics / Prototyping Food Cults

Food-secure eaters are increasingly concerned about testing and understanding the ingredients they put into their bodies. They are constantly on the lookout for allergens, GMOs and classes of food that have become socially downgraded (carbs, gluten, etc.)

This workshop gives participants a chance to experiment with a variety of food tests, and invent and create artifacts and rituals for future food cults. What kind of cultural rituals and norms may  emerge around ingredients in the near future, and what will the interfaces and interactions for keeping unwanted ingredients out of one’s diet look like?

Some of the tests we are considering are gluten and GMO related; some honey and fish will be analyzed, too.

In-Vitro Meat Workshop

This two days’ workshop will cover the theory and practice of growing meat outside of the body of the animal using tissue engineering technologies. Percipients will learn the basics of culturing meat (mice muscle cells) and will explore different  methods that are currently developed in the area of in-vitro meat. The theoretical component will critically examine the scientific, ethical, ecological and cultural claims and narratives of cultured beef.

ArtMeatFlesh-tapahtuma Teurastamon Flavour Studiossa

Työpajankatu 2, Sörnäinen

This live cooking show forces two teams of artists and scientists to face-off in a kitchen, where they will confront lab grown meat, future food cults, a secret ingredient and the very strong stomachs of the audience. Join us to taste, debate or reject a future where meat from animals has disappeared entirely. The audience will be the judge of these recipes and rituals from the future, helping to decide if mankind should move towards automated protein factories or strange new festivals of excess and penance.
